What's for Lunch 2: Open-faced Egg Sandwich


I'm luck enough to live close to my office, so I can head home for lunch on days where there aren't a lot of meetings or impending deadlines. The other day, I was craving something breakfast-oriented, so here's what I came up with: an open-faced egg sandwich on wheat bread with a slice of grilled tomato. And you know what? It was delicious.

What's for Lunch 1: Not Your Ordinary Grilled Cheese


Years ago, I fell in love with a sandwich made at one of my favorite delis in New York City. It had deli ham, fresh brie, spicy honey mustard, and thinly sliced green apple on fresh, crusty bread. They were rich and flavorful and such a delight. I miss being able to walk to my local deli and get things like this.

So, for lunch I decided I wanted to make something light and flavorful. Whenever I'm out for lunch and not super hungry, I'm drawn to grilled cheese, so that's what I decided to have. But not just any grilled cheese. I wanted flavors, and what better way to jazz up an ordinary grilled cheese than to put a little spin on it like my favorite NYC deli?

Travel Journal 1: Focusing on Good Choices

Recently I was talking with a friend about traveling. She noted that she always gains weight due to all the eating out and drinking, etc. I started thinking about how common that is. So many people lament the same troubles. They diet and exercise when they're home and in their normal routines, but as soon as their environment changes, health goes out the window.

Pesto Zucchini "Noodles" with Tomatoes



I recently acquired a Spiralizer and today's recipe was such a success, I'm sharing it with you all! Warning - your carnivorous husband devour it, leaving zero leftovers! At least, mine did - so I have no idea how this reheats. But it tastes fantastic right off the stove!

Deniabetes

Deniabetes : The common but completely irrational reaction to being told you have Type II diabetes - complete and total denial.

I don't have diabetes. I don't have diabetes. I don't have diabetes.

I have told myself that a lot these last few years. Watching several family members lose limbs due to complete negligence and denial of their true level of health, I knew that if my numbers ever told me there was a problem, I was going to do something about it.
